Monopoli, a picturesque town on the Adriatic coast, is a charming blend of history and seaside allure. Known for its well-preserved medieval architecture, Monopoli boasts a stunning seafront castle, Castello Carlo V, and a labyrinthine old town. The town's vibrant history includes Roman roots and significant medieval developments. The lively harbor, bustling with fishing boats, highlights its maritime heritage. Monopoli's cathedral, the Basilica Cattedrale Maria Santissima della Madia, is a key historical site dating back to 1693. The local cuisine, with fresh seafood and traditional Apulian dishes, adds to the town’s irresistible appeal.
Day 1 - Welcome to Monopoli
Located 25 kilometers away from the center of Monopoli, Alberobello is one of the most picturesque towns in the world, consisting almost entirely of tiny trulli houses. Certainly the most famous UNESCO town in Puglia, Alberobello looks like a white-washed hobbit village; only here have trulli strayed from country to town. The steep, narrow roads in the center are lined with trulli that have been converted to restaurants and picturesque stores selling trinkets. In the quartieri known as Monti and Aia Piccola are entire streets of trullis, rising in neat terraces. And on the outskirts of town, locals live in most of them.
Day 2 - Biodynamic Wine Tasting, the Godfather of Apulian Cuisine, Trulli in Alberobello
Continuously inhabited for the last 9,000 years, Matera holds the record as the third oldest human settlement in history after Jericho and Aleppo – and has been a UNESCO World Heritage Site since 1993. Its historic center, known as Sassi, is built on a dense net of overlapping caves and burrows that are completely built out of the limestone canyon in the Murgia plateau. Many of Matera’s caves have been equipped with electricity and wi-fi, but others – including secret churches containing Byzantine frescoes – remain privately owned. Because of its colors and sights, Matera is often portrayed as a nativity scene or used as a movie set (including King David with Richard Gere, Mel Gibson’s, “The Passion”, and Ben Hur with Morgan Freeman). James Bond even took to the streets of Matera in a mesmerizing car-chase scene for the 2020 film, “No Time to Die”.
Day 3 - Altamura Bread, Matera UNESCO World Heritage Site, Dinner in a Butcher Shop
Along limestone cliffs on the Valle d'Itria coast, this town has winding streets leading to centuries-old churches and chalky white houses covered with climbing vines and cacti. In the center, clusters of buzzing aperitivo bars are packed with locals on their passeggiata. Polignano a Mare is also home to what may be Italy’s most photographed beach – a pebbly cove sitting below the Ponte Borbonico di Lama Monachile bridge. For the best views, head into the old town and find La Balconata sul Mare, then follow us to one of our secret spots!!!
Day 4 - Burrata Making, Polignano by Boat, the Magic of Caffè Speciale
Driving through the beautiful Valle d’Itria, you will see Ostuni long before you arrive; the vast ‘White City’ rising high above the ocean of olive trees that sweep through this verdant area of Puglia. Perched on three hills and built atop to protect from invaders, Ostuni is a certifiable labyrinth. Its charm lies in the characteristic white walls of the houses in the old town, with winding alleys adorned with lush plants and flowers hanging from brightly painted windows. Ostuni owes its fame to the characteristic white-washed houses of its historic center. All the houses in the historic center are painted using only white lime paint, a tradition Ostuni's inhabitants still continue. The entire old town is a collection of age-old buildings, one seemingly built on top of the other, and crowned by the impressive 15th century Gothic cathedral.
Day 5 - Apulian Farming Masseria, Orecchiette Cooking Class, Ostuni “la Bianca”

Near the southern tip of Puglia, in Italy’s heel, sits Baroque Lecce. Nearly all its numerous churches – more than 40 dotted across the city – were built in the 17th century, which gives the place a real sense of architectural symmetry. In fact, this stunning architecture was built or renovated between the middle of the 17th century and the end of the 18th to create one of the most unified urban landscapes in Italy. From its many churches and dozens of noble palazzi, Lecce has been called the “Florence of the South”. The relaxed feel stems from the fact that this is a university town, buzzing with young students.
Day 6 - Morning Lecce Walking Tour, Pizza Making Class
Nestled on the stunning coastline of Apulia, Otranto (also known as the pearl of Salento) is a small seaside town that truly offers something for everyone. History enthusiasts will be captivated by the Cathedral of Otranto, with its nine centuries of history and breathtaking 12th-century mosaics depicting the story of knowledge and divine love. The imposing Aragonesi Castle, with its massive walls and towering battlements, stands as a testament to Otranto’s strategic importance throughout history. For those who prefer relaxation by the sea, the town boasts crystal-clear waters and a picturesque waterfront promenade with views stretching towards the Balkans and Greece. Whether you seek history, culture, or serene seaside beauty, Otranto is a must-visit destination in Salento.
Day 7 - The Gems of Salento, Tricase Gelato, Seafood, Otranto’s Cathedral
Day 8 - Goodbye Puglia
Hi, I’m Thea
I’m an American who first moved to Italy in 2003, to a small university in a town called L’ Aquila, about 1 hour outside Rome.
It was an opportunity to immerse myself in Italian life and culture. The town was small enough that few people spoke English, and my Italian language skills improved rapidly out of necessity.
Since then, I’ve lived in Pescara, Florence, and Milan. I’ve also crisscrossed the country, from Palermo, Sicily, and Bari, Apulia, to Trieste, Veneto, and countless places in between.
Living in Italy and reading “The Blue Zones’’ has made me obsessed with what it means to live the good life.
LA DOLCE VITA
Which is why I’ve created “Materia Prima - Puglia’’.
The intersection between community, great quality delicious tasting food, passive activity, and a sprinkle (sprinkle) of beauty.
To help you experience the epitome of the good life in Italy, so you can take that knowledge and that joy back with you to wherever you currently call home.
Meet Livio
Livio is the co-founder and head of Zest of Italy, sourcer, sorcerer, and a great advocate of Italian food and wine artisans.
He’s my (and some of the most prominent names in food in the world) go-to person for sourcing food and wine products across the Italian boot.
Born in Torino with Apulian roots to a large family scattered throughout the country. A career change from engineer to graduate of the University in Pollenzo led Livio to working closely with Slow Food founder Carlo Petrini.
During this time, he traveled on food tours with renowned chefs, Michel Troisgros (Three Michelin Stars), Giorgio Locatelli, and Nancy Silverton as their guide.
“Whenever I plan a trip to Italy the first persons I call are not my travel agent, not my children nor my chefs, they are Livio and Kathrin.
They are so in tune with the very heart and soul of Italy, that they are essential.
In the past years, they have taken my friends and me both to temples of gastronomy and to little farms where true artists work. Livio and Kathrin are smart, charming, and not “know it all” characters at all. They ask you questions, which are vital on a trip, and make sure all runs smooth and in the way you want to experience. And to top it all, they are such truly good hearted persons.”
- Nancy Silverton, Osteria Mozza, Los Angeles
“Livio and Kathrin (Kathrin is part of the Zest of Italy team) are a brilliant example of the Gastronomes that the University in Pollenzo can be proud of. Coming from different cultures and paths, they met here when the University took its very first steps; they were guided by a vision and passion for gastronomy in its most profound and complex sense.
Working with them and following their journey, I am glad and proud to see them constantly committed to spreading the values of local cultures — through the beauty of craftsmanship — and developing sound travel experiences: for the hosts, as they protect cultures and landscapes, the travelers, as they live unique authentic experiences and, finally, for the whole planet.”
- Carlo Petrini, Slow Food Founder, Piemonte
